there are those like iron bull and the qunari from DA2 those are part of the qunari race
there are those like sten who are also part of the qunari race but have a rare genetic disorder that causes them to be hornless similar to redheads in humans
then theres everyone else like gatt who follow the qun but are not actually part of the qunari race
as for the elves DA2 simply changed their models which they sorely needed in origins elves looked like skinny humans with pointy ears in DA2 and onwards elves now have a unique design

i much prefer the Elvish design in DA2. I forgot I made my person an Elf in DAO because of how similar they looked to regular humans; Always a bit jarring when I was recognised as an elf!
